  • Quinoa: 1 cup
  • Cucumber: 1, diced
  • Bell pepper: 1, diced
  • Cherry tomatoes: 1 cup, halved
  • Red onion: 1/4, finely chopped
  • Parsley: 1/2 cup, chopped
  • Lemon juice: 1/4 cup
  • Olive oil: 3 tbsp
Instructions

    Rinse quinoa under cold water. Cook according to package directions. Let it cool.
