Ingredients
  • Brown or green lentils: 1 cup
  • Carrots: 2, chopped
  • Celery: 2 stalks, chopped
  • Onion: 1, chopped
  • Vegetable broth: 6 cups
  • Diced tomatoes: 1 can (14.5 oz)
  • Cumin: 1 tsp
  • Thyme: 1 tsp
Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat.
